Rædwald (pronounced Redwold) returns after its sell-out debut last year.
This reblochon-style washed-rind cheese is made on our Suffolk farm during the winter months, using the rich afternoon milk of our free-ranging Montbéliarde cows.
It has a crunchy, toothsome rind and a smooth, oozing paste, with flavours reminiscent of Suffolk’s coastal woodlands — notes of salty bacon, hazelnuts, hidden fungi and mossy bark.
The young cheeses are washed in natural annatto, giving Rædwald its distinctive light bronze rind and a hint of sea-air character. It's then aged on our farm for several weeks to develop its ideal balance of creaminess and savoury depth.
Please note: Rædwald is only available February – April each year, while stocks last.
Orders placed this week will be delivered week commencing 16th Feb (Tuesday to Friday).
Storage:
Eat before the “Use by” date shown on pack. Store in the fridge.
For best flavour, bring to room temperature one hour before serving.
If freezing, freeze on day of delivery. Defrost in the fridge. Once defrosted, do not refreeze.
